31 Days of Progress Day 7 :: Experimenting in the Kitchen

This was supposed to be a post with my new Whole Wheat Oatmeal Pumpkin Pancakes recipe…yummy and healthy, right? Well, this month’s theme is about making progress, moving forward…not always about reaching the destination.  Don’t get me wrong.  It wasn’t a failure.  They were edible, even tasty.  They just weren’t great yet.  Granted, I have been cooking for over thirty years, and homemaking for over 23.  I’ve got the cooking basics down pretty well.  If you are not a very experienced cook you want to be a little more cautious if wasting ingredients might put a strain on the budget.  But if you can afford a failure now and then, I say go for it. You might just create something wonderful!

Almost_Pancakes

I was mixing 2 of my tried and true recipes, changing two ingredients, and adding pumpkin.  I substituted my canned pumpkin for one of the eggs and half of the oil in my recipe.  The resulting pancakes were a bit too delicate and not “pumpkiny” enough for me and the spices were somehow not quite right for my taste.  So, I will try again. I will increase the amount of pumpkin, decrease the liquid {buttermilk & skim milk}, add the missing egg back in for better structure and use the spices from my favorite pumpkin pie recipe.  I’ll post it when I get it juuuuuuuusst right!

…clean wet batter off your spatula by wiping it on the edge of your griddle or pan…then scraping it off after it cooks?  Yeah, me too. 🙂

  1. Well daughter dear…you know I experiment because of my allergies too. I think pancakes with pumpkin in them sound yummy. I may have to try my own invention since I can’t use the eggs. I will use my substitute!
    I am a “messy” cook! Especially messy when I bake!!!! (:>)

    I am craving pancakes now…maybe I will have them for lunch!
